Oatmeal Peanut Butter Cookies

Oatmeal, peanut butter, and butterscotch! Could there be a better combination? DELICIOUS! The cookie dough is to die for as well!

1 ½ cups brown sugar, packed
1 cup butter, softened
1 teaspoon vanilla
1 eggs
2 cups quick-cooking oats
1 ½ cups flour
1 teaspoon baking soda
¼ teaspoon salt
2 cups butterscotch chips
1 cup peanut butter

1. Heat oven to 350 degrees
2. In a large bowl, stir brown sugar and butter until blended
3. Stir in vanilla and egg until light and fluffy
4. Add peanut butter
5. Stir in oats, flour, baking soda, and salt
6. Add butterscotch chips and nuts if desired
7. Drop cookies onto an ungreased cookie sheet and bake for 9-11 minutes
