Easy Taco Melts



For "Foto Friday" I decided to do a picture of the Valentine that I made for the hubs. So fun and he LOVED it. Directions can be found here. I will be posting the recipe for the cupcake as well in the near future. It is a red velvet cupcake with cheesecake baked into it and white chocolate frosting :)!


I had some left over meat and saw this recipe. I knew that I had to make it. It was DELICIOUS and slightly different than your normal taco night. Super easy for a quick weekday meal!

Ingredients
1 lb ground beef, cooked, drained (cooked with taco seasoning if desired)
1 1/2 cups salsa, divided
1 can (16.3 oz) refrigerated biscuits (like grands)
1/2 cup shredded Mexican cheese blend

Directions
1. In a 10-inch skillet, mix cooked beef and 1/2 cup of the salsa. Cook over medium-high heat, stirring occasionally, until hot.
2. Press each biscuit into a 6-inch round. Spoon 1/3 cup meat mixture and 1 tablespoon cheese onto center of each round. Fold dough in half over filling; press to seal. Place on greased cookie sheet.
3. Bake at 375 for 14 minutes (or until golden brown and dough is cooked through). Serve with remaining salsa and sour cream.
