Spicy Sausage Pasta



This meal could not be easier and could not be more delicious. Cheesy pasta with a twist?...Yes please! 

Ingredients
1 tbsp olive oil
1 lb smoked sausage
1.5 cups diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 (10 oz) can Ro-Tel tomatoes and green chiles, Mild
1/2 cup heavy cream
8 oz penne pasta
1/2 teaspoon salt and pepper, each
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions

Directions
1. Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
3. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

  1. I simply use a box of Mac and cheese. I prefer to use the creamy cheese kind. I use the rotel, smoked sasuage (I use Ekridge smoked turkey kind). Cook mac and cheese dinner according to directions ,then add smoked sasuage and rotel. Put in the oven and cook at 350 degrees for about 30 mins. Enjoy!

  2. Made this last night - not nearly the correct amount of cream or broth. I at least doubled both the cream and broth. Though very good and the hubby liked it. Don't follow the recipe and leave it simmer on your stove - if you do you will burn it. Trust me... I caught mine just in time. Very tasty though.

  3. My family loves this recipe! I don't think I've ever added the scallions as I simply forget every time. Still delish. It is quite spicy for me and the kids, so we add a splash of each or sour cream just to tame it. I've made this several times and will continue to refer back. Thanks for a great recipe!
