Zucchini Bread

What a great way to get your kids to eat their vegetables!

1 ⅔ cups flour
¾ teaspoon salt
½ teaspoon ground nutmeg
1 teaspoon baking soda
½ teaspoon ground cinnamon
1 ½ cups sugar
½ cup vegetable oil
2 eggs, beaten
⅙ cup water
1 cup grated zucchini
½ cup chopped pecans

1. Preheat oven to 350 degrees
2. Butter and flour a bread pan
3. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon, and sugar
4. In a separate bowl, mix vegetable oil, eggs, water, and zucchini
5. Mix wet ingredients into the dry ingredients
6. Add nuts, if desired
7. Bake for 1 hour
