Super Fresh Black Bean and Pineapple Salsa


We had a fresh pineapple and were thinking of all the things we could do with it. We decided to try a pineapple salsa. Put this on quesadillas, top your chicken and fish with it, or eat it with tortilla chips! So fresh, so versatile, so good!!!

Ingredients
1 can black beans, drained
1 1/2 - 2 cups fresh pineapple, diced (use canned if you don't have fresh)
1 red bell pepper, cored, seeded and diced
1 medium green bell pepper, cored, seeded and diced
1 -2 jalapeno peppers, cored, seeded and minced
1/3 red onion, diced
1/2 cup fresh cilantro leaves, chopped
1 - 2 avacados, diced (the easiest way we have found to cut an avacado is to make the line cuts in the avacado while it is in the peel and then spoon it out)
1 - 2 tablespoons ground cumin
1 tablespoon olive oil
1 1/2 teaspoons salt (to taste)
1/2 teaspoon pepper (to taste)

Directions
1. Mix all the ingredients together to taste (adding more or less when desired). The longer the salsa sits the more liquid it produces so don't over liquify it.
