Apple Cranberry Pork Roast

You guys know how much I LOVE my slow cooker. This recipe was super easy (obviously, it was made in the slow cooker) and super delicious. If you love thanksgiving flavors, this one will be perfect for you. I know the picture looks funny but that is just the cranberries that have been rehydrated by the liquid. Trust me, it tastes SSOOO good!

Ingredients
1 (3 to 5 pound) boneless pork loin roast
1 can cranberry sauce
1/4 cup brown sugar
1 - 24 fl oz bottle mountain dew
2-4 apples, cored, pealed, and coarsely chopped
1/4 cup dried cranberries
Salt and pepper to taste

Directions
1. Poke holes in the roast. Season with salt and pepper. Place in the slow cooker.
2. Add the remaining ingredients and cook on low for 7 to 9 hours.

Note: Use the juice from the slow cooker to make some rice. It will give the rice some great flavor and make it a perfect pairing for this meat.

  1. Yum...what size is the bottle of Mountain Dew? 1 liter?

  2. No, just one of the little ones that comes in the six pack. You could do a can too if you wanted. Or substitute it for apple juice. Whatever you have on hand. Ill add the size to the recipe. Thanks for pointing that out! :)
