Cake Batter Ice Cream

If you like Cold Stone's cake batter ice cream, you will LOVE this ice cream! It is seriously SO good! Adults and kids alike cannot get enough of this cake batter ice cream! YUM!!!

Ingredients
1 cup half and half
3/4 cup sugar
2 cups heavy cream
1 teaspoon pure vanilla extract
1 cup cake mix (I used yellow)

Directions
1. Whisk the half and half and granulated sugar until the sugar is dissolved. Stir in the heavy cream and vanilla. Then stir in the cake mix (to avoid lumps, sift cake mix in).
2. Pour mixture into the freezer bowl and churn as directed by your machine. Remove ice cream from freezer bowl and place into a freezer proof container and freeze for 8-10 hours.

  3. This is not a good idea from a food safety standpoint. Cold Stone had a recall of their cake batter ice cream because of Salmonella - not from the eggs, as you might expect, but from the flour. Flour-based dry mixes are not meant to be eaten without going through baking (a kill step). Flour has a history of being contaminated with Salmonella - lots of birds in the wheat fields and no kill step in the milling process.

  5. To Anonymous, you could put the dry cake mix in a pan & heat it to 175F degrees to get rid of the Salmonella. The freezing should also help with it. It sounds delicious! I would figure out a way to make it work & keep it safe!
