Texas Caviar
We got this recipe from Sarah. Everyone who has ever tried it, loves it! it will likely become a staple in your diet :).
Ingredients
2 cans diced tomatoes, drained
1 can black eyed peas, drained
1 can black beans, drained
1 can corn, drained
1 bunch cilantro, chopped
1 bunch of green onions, chopped
2-3 avacados, diced
1 pkg Good Seasonings dressing powder mix (found with the salad dressing mixes).
Directions
1. Prepare the dressing as called for on the package.
2. Mix all of the other ingredients together with a spoon. Place the avacado pits in whole to reduce browning of the avacados.
3. Pour half of the dressing over the mixture and combine (you can do all the dressing but we like to only do half).
These are great on quesadillas, burritos, chips, etc...
