S'mores Cookies


For some reason, I have been on a s'mores kick lately. S'mores bars last week, s'mores cookies this week, who knows what is next. 

I saw these delicious cookies on Baked Perfection and could not resist making them. They were absolutely delicious and everyone loved them. I would say that if I had to choose between making these or the s'mores bars from my Paula Deen magazine; there is no question about which one I would make: S'mores Bars! But nonetheless, these cookies were great as well.

Ingredients
1 1/2 cups all purpose flour
1 cup graham cracker crumbs
1 teaspoon baking soda

1 teaspoon salt
1 dash of cinnamon
1 cup (2 sticks) butter, softened

3/4 cup sugar
3/4 cup brown sugar

1 teaspoon vanilla extract
2 eggs

2 cups miniature chocolate chips
1 1/2 cups mini marshmallows
2 Hershey bars, chopped


Directions
1. Preheat oven to 375 degrees.
2. In a medium bowl combine the flour, graham cracker crumbs, baking soda, salt, and dash of cinnamon. 
3. In another bowl beat together the butter, sugar, brown sugar and vanilla extract until creamy. Add the eggs one at a time, beating well after each addition. 
4. Slowly beat in the flour mixture until smooth. Stir in the chocolate chips. 
5. Drop by rounded tablespoon onto ungreased cookie sheet.
6. Bake for 8 minutes, and remove from the oven. Push 3 to 4 marshmallows and a few pieces of hershey bar into each cookies. Return to the oven and bake an additional 3-4 minutes until fully cooked. Cool cookies on a wire rack.

  1. I've made these cookies several times and LOVE them! I'm working on tweaking the recipe so they're not as sweet, but otherwise great!
